Ingredients
1 Medium yellow onion diced 🧅
1 Large Red Tomato diced 🍅
1 Medium yellow Sweet Bell pepper diced
1 Medium Red Sweet Bell pepper diced🌶
1 Medium Orange Sweet Bell pepper diced
1 Medium Eggplant with skin grilled and diced 🍆
2 cups of diced portobello Mushrooms 🍄
2 Medium diced Grilled Green Zucchini with skin.
Olive Oil
Salt and black pepper
Ketchup
Worcester Sauce
Preparation
On medium heat in a large skillet warm the olive oil and add the onions. Keep stirring until almost golden brown.
Add the mushrooms and stir the mixture for about 3 min.
Add the Bell Peppers and stir for about 5 min.
Add the Diced tomato and turn heat to low.
Add the diced Eggplant and Zucchini
Add Ketchup (About 5 Tablespoons)
Add Worcester Sauce (About 5 Tablespoons)
Add Salt and Pepper to taste.
Stir and leave to slowly for about 20 min. Occasionally stir.
Taste and add more Ketchup and Worcester Sauce if needed.
This sauce can be frozen. It's delicious over Whole Wheat sprinkled parmesan cheese. Also a baked Sweet Potato or over scrambled eggs.
