Quick....HEALTHY.....Nutritious!!



1 Matzo lightly salted

1/2 Avo

1/2 cup of Lowfat cottage cheese

5 - 10 unpitted olives chopped

1/4 Chopped Red Bell Pepper

1/4 Tomato chopped

1 Poached egg

Salt and Pepper

EVOO to drizzle


Mash the avo and add the olives and spread the Matzo

Add the cottage cheese and spread over the avo

Top your Matzo with the bell pepper and Tomato

Add the poached egg and drizzle with olive oil.

Add salt and pepper to taste.
