1 Ripe Avocado cut in half

1/2 cup of Low fat Cottage Cheese
Put the poached eggs on top of the Avo (One egg on each half) and add the cottage cheese on top of that. Finish off with salt and pepper. Drizzle with Olive Oil.
2 slices of Toasted Ezekiel Bread (I prefer cinnamon and raisin) OR 2 pieces of Lightly Salted Rice Cakes
