Sweet potato with Tuna salad and homemade coleslaw
1 Med size Sweet Potato baked in the oven for 45 min to 1 hour at 400 or until soft
Tuna Salad
2 cans of Tuna in Olive Oil or water
1/2 Onions chopped and sauteed till golden brown
1/2 Red or Yellow pepper chopped and sauteed
1/2 Cup of mushrooms chopped and sauteed
1/2 cup of brussel sprouts chopped and sauteed (optional)
1 - 2 Tablespoons of Vegan Mayo (Veganaise)
Salt and pepper
Mix everything together and cool
Coleslaw
1 small head of Coleslaw sliced
1/2 cup Cranberries
1/2 Grated Sweet Red apple
1/2 cup of diced sweet orange
1/2 cup chopped celery
1 Large Carrot grated
1 - 2 Tablespoons of Vegan Mayo (Veganaise)
1/2 Tsp Cayenne Pepper
a handful of walnuts
Salt
Mix everything together and cool
